Traditional Middle Eastern Kebabs

Grilled Steak Kebab

Ingredients

  • 5 lb. Bottom Flap Sirloin, 1” cubes

  • 4 Tbsp Tomato Paste

  • 1 Tbsp Kosher Salt

This cut of beef is also known as Steak Tips in New England. Can be substituted for cubed tenderloin or any tender cut.

Preparation

  1. Toss all ingredients together very well and marinate for at least 12 hours.
  2. Fire up the grill!
  3. Mix ingredients thoroughly after marinating, then skewer onto 12' skewers.
  4. Cook to desired temperature, if cooking bottom flap sirloin we suggest cooking to a medium temperature for a preferred consistency.

Grilled Chicken Kebab

Ingredients

  • 10 lb. Chicken Breast, 1” cubes 

  • 1 Cup Olive Oil 

  • 4 Fl oz Lemon Juice

  • 1 Tbsp Dried Mint, crushed

  • ¼ Cup Sumac

  • 2 Tbsp Kosher Salt

  • Black Pepper

Preparation

  1. Toss all ingredients together very well and marinate for at least 12 hours.
  2. Fire up the grill!
  3. Mix ingredients thoroughly after marinating, then skewer onto 12' skewers.
  4. Cook until cooked through, serve and enjoy!
