Traditional Middle Eastern Kebabs
Grilled Steak Kebab
Ingredients
- 5 lb. Bottom Flap Sirloin, 1” cubes 
- 4 Tbsp Tomato Paste 
- 1 Tbsp Kosher Salt 
This cut of beef is also known as Steak Tips in New England. Can be substituted for cubed tenderloin or any tender cut.
Preparation
- Toss all ingredients together very well and marinate for at least 12 hours.
- Fire up the grill!
- Mix ingredients thoroughly after marinating, then skewer onto 12' skewers.
- Cook to desired temperature, if cooking bottom flap sirloin we suggest cooking to a medium temperature for a preferred consistency.
Grilled Chicken Kebab
Ingredients
- 10 lb. Chicken Breast, 1” cubes 
- 1 Cup Olive Oil 
- 4 Fl oz Lemon Juice 
- 1 Tbsp Dried Mint, crushed 
- ¼ Cup Sumac 
- 2 Tbsp Kosher Salt 
- Black Pepper 
Preparation
- Toss all ingredients together very well and marinate for at least 12 hours.
- Fire up the grill!
- Mix ingredients thoroughly after marinating, then skewer onto 12' skewers.
- Cook until cooked through, serve and enjoy!
